Our Jersey steers are scheduled for harvest in July, just before two years of age, and will be available as half shares (sides) of locker beef.
They are pasture-raised on grass through the summer and fed hay during the winter and dry months. Compared to traditional beef breeds, Jersey beef is naturally leaner, exceptionally tender, and known for its rich, beef-forward flavor.
Jersey cattle also produce distinctive golden fat due to naturally higher beta carotene levels. That buttery fat melts beautifully during cooking, helping keep the meat moist and flavorful. Often considered a gourmet beef, Jersey offers a unique combination of tenderness, flavor, and quality that is difficult to find commercially.

$500 deposit to hold a side (by cash, Venmo, or Zelle)
$5/lb hanging weight to seller (me)
Cut & wrap - you tell the butcher how you want it cut:
$1.05 / lb
+ $100 kill fee
+ $40 disposal fee
There is a surcharge for time-consuming specialized cuts, all or nearly all ground (some is included), individually wrapped steaks, etc. (I don't ever get these added onto my orders, as the regular rate covers most everything.)
Will be ready July 23, July 28, and early August. The butcher is in the Saint Maries area, but I can meet you in Coeur d'Alene or Post Falls to save you the drive.
